Oysters Steamed with Lemongrass

Highly nutritious and packed with protein, oyster meat can be prepared many ways including the irresistible oysters steamed with lemongrass.

Ingredients: (serves 3)

- 1.5kg of oysters
- 5 lemongrass sprouts, partially crushed
- 2 red peppers, sliced
- Seasoning and pepper

Preparation:

- Select large, white oysters and clean thoroughly. Rub the shells with salt.

- Clean the lemongrass and peel off the outside covers and slightly crush them.

- Combine the oysters, crushed lemongrass, sliced red pepper and seasoning 
  in an earthen pot and cover with water. Boil until the oyster shells open.

- Served hot with chilli or salt mixed with lemon juice and pepper.
