Snake-Head Fish Simmered with Pepper

Snake-head fish simmered with pepper is a delicious and therapeutic dish, containing many minerals and vitamins, that can treat some diseases and have effects on anti-oxidation. It is a popular dish with a distinctive taste of pepper, dill and coriander. Its sauce is tasty and has a light red colour of tomatoes. The dish is usually served hot with rice and vegetable dishes.

Ingredients:

- Snake-head fish: 1kg
- Liquid lard: 80g
- Tomato: 200g
- Green onion: 50g
- Coriander, dill, fish sauce, pepper and seasoning.

Preparation:

- Scale and gut the fish and then cut it into large pieces. Mix the fish with 
  pepper, seasoning and fish sauce.

- Wash and cut the tomatoes into wedges. Slice green onion, dill and coriander.
- Heat the liquid lard in a pan and put the fish pieces in. Fry until they get brown.
- Fry the tomato wedges and then add a little fish sauce and seasoning. Pour a bowl of water in and continue cooking until it becomes pasty. Put the fish pieces in and cook for a few minutes. When the fish is tender, add sliced green onion and dill.
- Place the fish on a large plate and top it with pepper.
