Fish Rolls with Pork

This popular, tasty dish combines the flavours of fish, pork, eggs and selected spices with a delicious sauce.

Ingredients: (serves 3)

- 0.5kg of Gion, or snake-head fish
- 0.3kg of lean pork
- 2 eggs
- Mushroom, red pepper, ginger, scallion, seasoning, pepper,
  garlic, lemon and dill.

Preparation:
-  Separate the fish meat and slice it into pieces of 10 cm long and 4cm wide.
   Grind the pork and chop mushroom, ginger and red pepper then mix together
   with spices.
-  Fry whipped egg into thin paper and place on the fish. Add the pork and make
   the fish rolls, securely tying with a scalded scallion. Steam the rolls and place  
   on a plate decorated with coriander and tomato.
- To make the sauce, dissolve fish sauce in 200ml of boiled water and add
   two spoons of sugar, lemon juice, pepper, seasoning, chopped dill and
   red pepper.
- Served with rice vermicelli and salad.
